Food & Wine magazine of USA, with its 8 lakhs circulation, is supposed to be an authority on the culinary habits of Americans. This magazine has chosen Thomas John, Karikkattor, near Manimala, Kottayam as one of the 10 best chefs of USA. 36-year-old
Thomas John, who has been in USA since the last 1 year, is executive chef
at Mantra, an Indian restaurant in Boston. Every
year the magazine selects best new chefs based on thousands of nominations
received from critics, travel writers, chefs and others in the food
industry. The editors of the
magazine visit the shortlisted restaurants and select the best dishes and
the chefs who prepared them. Thomas
John, who is the son of Squadron Leader V.G.John, studied at the Oberoi
School of Hotel Management, New Delhi and later worked in the hotel chain
from 1989 to 1998. He later
moved to Le Meridian, Pune as the executive chef before embarking for USA. During
his many years of experience in the industry, he has understood one thing:
a little Kerala spice if added to western dishes can create mouth-watering
menus.
